Ingredients
Ghee - 2 tbsp
Oil - 1 tbsp
Cumin seeds - 1 tsp
Bay Leaf - 1
Cloves - 4-5
Black peppercorns - 6-7
Cinnamon stick - 1 inch
Onions - 2 (sliced)
Ginger- Garlic Paste - 1 tbsp
Green Chillies - 2-3
Tomatoes - 2 (diced)
Cauliflower - 150 gm (cut into big florets)
Beans(diced big) - 1/2 cup
Green Peas(frozen) - 1/2 cup
Carrot (diced big)- 1
Salt to taste
Turmeric powder - 1/2 tsp
Red chilli powder - 1 tbsp
Basmati Rice - 1 cup (washed & soaked for 30 mins)
Water - 2 cups
Freshly chopped coriander leaves for garnish
Method
-Heat a pressure cooker & add both ghee & oil.
-Once hot, add the whole spices & cumin seeds. Once they crackle, add the onions & sauté till golden brown.
-Then add the gg paste & sauté till it’s raw smell disappears. Add a dash of water to avoid it from sticking to the pan.
-Now add all the veggies except green peas & give everything a good mix.
-Season with salt, turmeric & red chilli powder. Mix well.
-Add the rice and gently give it a toss. Do not handle the rice too vigorously as you don’t want the grains to break.
-Now add the green peas and Green chillies.
-Add water, give it a gentle stir, close the lid & give just 1 whistle. Let the pressure release completely before opening the lid.
-Serve garma garam, preferably with boondi raita. Enjoy!
