200 g of 00 flour @molino.dallagiovanna
150 g Greek yogurt
30 ml water
1 teaspoon salt
½ teaspoon baking soda
1 tablespoon extra virgin olive oil
Instructions:
In a bowl, mix the flour, Greek yogurt, water, salt, baking soda, and olive oil. Knead until you get a smooth and firm dough.
Divide the dough into 6 or 8 equal portions and let the dough balls rest for 40 minutes, covered with a clean wet kitchen towel.
After resting, roll each dough ball out with a rolling pin into thin discs, then let them rest for another 20 minutes, still covered.
Heat a non-stick pan over high heat and cook one disc at a time.
When the dough touches the hot surface, the magic happens: the bread will puff up!
Flip each disc often to ensure even cooking and a Pierfect golden-brown crust on both sides.
Once cooked, you can gently slice them and fill them as you like. I filled mine with oven-roasted cherry tomatoes, a ricotta and pesto cream, and fried eggplant cubes coated in semola.
