So glad I upgraded from the 2 to the 3 finally no more ear pain! The sound quality is far superior as well. Also the noise cancellation is vastly superior to the Pro 2 model you activate ANC and it's like the whole world stops LOL. Dont let this video scare you definitely get the new ones

How do they compare to the AirPods Max that I own? Is it worth upgrading from the maxes to the pro 3s?

I received a pair of the Pro 3’s recently, and in my opinion, the fit is much better. I wear them for extended periods at work, and they don’t leave my ears sore like my Pro 2’s do. But in terms of sound quality, they seem very similar to the Pro 2’s, and I’ve noticed the noise cancellation seems a bit better, I’m assuming that’s due to the better fit and the foam-infused tips. But I agree, unless you really want the heart monitoring feature, I’d say go for the Pro 2’s; they’re more affordable, and they have been around long enough that Apple has quietly fixed most of their major issues.
