Make pesto pasta the Italian way 👇🏼

Marcella Hazan’s pesto recipe is my go-to for delicious, authentic pesto. Here are 4 crucial steps I always take to make the dish extra delightful!

1. Salt the pasta water: I learned many culinary things living in Italy but one of the most useful is how important salting the water is when boiling pasta - it should taste like the ocean!

2. Toast the pine nuts: this brings our the roasty, toasty nutty flavor of pine nuts. Be careful not to let them burn, as they toast very quickly!

3. Mix in the cheese by hand: Marcella insists that blending the Parmesan and pecorino in by hand gives the pesto better texture, so I always do this as well!

4. Dilute the pesto with pasta water: Marcella recommends setting aside some pasta water before you drain the pasta. Then use a tablespoon or to two to dilute the pesto which helps it coat the pasta uniformly.
