100% Zero Oil millet Almond Choco Cake
Ingredients :
Measurement cup - 200 ml = 130 gms
Dates (Used Mejdool dates bigger size) pitted – 130gms
Hot Almond milk or regular milk – 1/2 cup(130 gms)
Ragi millet flour or any gluten free flour - 3/4th cup(100gms )
Cocoa or Cacao powder - 1/4th cup(20gms)
Baking soda – 1 tsp
Baking powder – ½ tsp
Almond milk or regular milk – 1/4 cup+1 tbsp(70gms)
Garnish :
Choco Almond Butter to spread on cake
Roasted sliced almonds
80% Couverture choco callets for garnishing
Method :
Soak pitted dates in hot almond milk for 1 hr or till they become soft
Transfer soaked dates in a blender, add bananas & puree it.
Transfer the dates banana puree in a bowl, add the sieved dry ingredients (ragi flour, cocoa powder, baking powder, baking soda) & combine
Add almond or regular milk & fold gently.
Transfer the cake batter in a 7 inch rectangular tin or 6 inch round lined & greased tin.
Bake in a pre-heated oven @180*C for 40 mins or until a skewer inserted comes clean.
Once baked, cool completely for 4 hrs.
-Spread Choco Almond Butter, roasted sliced almonds & callets
-Slice & enjoy this delicious moist zero oil refined-free, sugar-free cake
