Your absolutely correct mate haven't keyed bonding cost once in lady 15 years and never have i had a complaint that it's not taken to bonding... The next day it does need sealing tho imo...

I'd say hit it even before it goes dark, sometimes if you hit bonding too late the multi wont stick, especially on ceilings.

Will it make a difference in the future though? E.g if you do it without keying it'll last 20-30 years whereas keying it will last 40-50?

Yes, remember that the water and the gypsum are working together so when it's wet just right is the perfect time. Then the layers you're adding bond together. The water in each coat bonding to the coat above. This is how gypsum works. Crystals.
