I was making this bread back when it was called "Cloud Bread" we now make everything with it from bread to cakes to buns to deserts its fun and we have a blast doing it. My husband is always coming up with some strange ideas and we try going with them and sometimes they turn out FANTASTIC. Other than that we just have a great time doing it. We came to this diet because I was a vegan for 6 years and went keto about 2 years ago... I went keto because I had a heart attack in the 6th year of being a vegan so we switched over to keto which not only cleared out my arteries but also healed the damaged part of my heart. It's amazing and if you have health problems you should at least try it.

this is the recipe.


Ingredients
6 oz. (1 cup) Greek yogurt (0% fat)
4 large eggs
1 cup (3½ oz.) whey protein isolate (unflavored)
1 cup (4 oz.) almond flour
1 tbsp ground psyllium husk powder
2 tsp baking powder
½ tsp salt
½ tbsp sesame seeds (optional)

I would sub almond ((o6:o3=2000:1) for lupin (omega ration 1:5 and also less carbs), also, yogurt is acidic, so, you can put a little baking SODA and make it more fluffy. A little instant yeast make also help for aroma. If you have inulin, can mix everything with 1 tbl spoon of inulin and give it a rise for 30 minutes then mix in the baking powder and soda and bake. Should make very light loaf. Maybe.. :)

This is the best keto bread I have made so far. Wait until it has fully cooled to slice it, and you will be able to cut much thinner slices. It makes a nice sandwich, it's great toasted to place a sunny-side-up egg on, and also great for cinnamon toast.
