I grew up with the cold butter method, and that's about the only crust I've made, just with minor variations, but I've heard of hot water crust before, and seen it in cookbooks, just never tried it. Now that I've seen you do it, and it has the John Kirkwood seal of approval, I'm definitely trying this out soon, possibly tomorrow!

Cannot believe you just put this on as I was thoroughly trying to figure out how it would be done last night! To scald the flour, simmering water and I was thinking do I simply melt the butter? So the crust will be more digestible but not dry & starchy. Thank you!!!!

ooh you've just reminded me I've still got 2 steak, ale & stilton pies in the freezer :) I have to say this type of pastry is extremely easy to make, and you end up with a crust that really hold up well, but I find the texture of shortcrust a little more palatable.

If, like me, you have a small kitchen with busy worktops, you can use a big, plain, hotel-size tray to work pastry and bread. Easier contained cleaning !!!

That looks a lot easier than cutting butter or lard into the flour. I will have to give this a try next time I make crust.
