Ingredients
2 3/4 cups sifted cake flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter
1 3/4 cups sugar
1 cup cream of coconut
1 cup buttermilk
1/2 tsp vanilla
1/2 tsp coconut extract
4 eggs separated
Bake at 325 convection or 350 regular oven till the cake is golden and springs back when pressed gently or a toothpick stuck into the center comes out clean.
