I wounder how u get to make bread not look like an oversied pancake from the inside. Cause ok, i get it some people cannot eat gluten at all, but many people do not even know what gluten actually is, and it is often considered something poisonous toxic. So: gluten is an ingridient of flour (yes it is in flour, at least the one mate from the wheat), and after adding water to it, it becomes like a chewing gum, but way more sticky, and stretchy. U can even easly extract gluten from pastry, by washing it on water. Just take your normal universal flour, ad a bit water to it, take a bowl, and keep washing it in water, until water is white. Once water will be white, just change it to a fresh one. The thing that makes water white here is skrobia (idk if it is right in english, but i'm Polish it is called skrobia), and it is basically sugar (yes flour is mostly sugar, and yes, u do not have to add sugar to prep your yest, if u add flour). Anyone who is a baker after a Scholl with a barek-like target will tell u that is true.
