how I made up for all the wagyu, tonkatsu, and ramen I ate in japan

recipe:
half a head of cabbage (napa, savoy, or regular)
200g pork (traditionally it’s pork belly, but pork loin or boston butt have half as many calories and still taste great)
250 mL broth (traditionally dashi, here we use chicken bone broth)
2 tbsp sauce (here we use soy sauce and mirin. miso is also great)
some ginger and green onion
salt to taste (depends on your brand of bone broth)

AHA! I understand now. My Japanese cookbooks do indeed have light, fresh, clean recipes, and I have noticed the difference in menu items at restaurants. Makes sense. Thank you!

If you cook the whole chicken SAVE THE BONES and make a broth. Bone broth offers collagen protein which aids in muscle repair but is more regarded for hair, skin, nails, and joints. You'll need to start eating it more when you get older

Love food with a balance of protein and vegetables together, just like the dish shown in the video. I am going to try making that.

I found a similar thing when visiting my sister-in-law's family in Thailand! Every dish in restaurants was flavorful meat and rice. I was so happy to finally get to their house and have fresh fruit and veggies!

I discovered bone broth is a good substitute for dashi as well! You helped me confirm it. This soup looks amazing. I love cabbage?”!
