✨The secret is … Stir-Fried Anchovies! Korean Stir-Fried Anchovies with Peppers
(Myeolchi Bokkeum)
2 Tbsps neutral oil
2 cups small dried anchovies
6 garlic cloves, minced
1/2 cup roasted slivered almonds
8 shishito peppers, cut into bite-size
2 tsps sesame oil
Sauce:
2 Tbsps rice cooking wine
2 Tbsps soy sauce
1 Tbsp sugar
1 Tbsp honey
Steps:
1. In a bowl, gently toss dried anchovies and 1 Tbsp of water to slightly hydrate them.
2. In a separate bowl, combine ingredients for the sauce and mix well.
3. In a pan, heat 1 Tbsp of oil over medium heat. Add the anchovies and stir-fry for 2 mins.
4. Move the anchovies to the side of the pan, add 1 Tbsp of oil. Add garlic and shishito peppers. Cook for 1 min.
5. Add the sauce and let it sizzle for 15 seconds.
6. Mix everything together. Reduce the heat to low. 7. Add sesame oil. Cook for 3 more mins. Top with almonds. Enjoy!
8. Store in an airtight container in the fridge for up to 2 weeks.
