Usually you have the problem with the thicker honeys, wich aren't that good for this purpose. With the type of honey you use in the video you can just happily use it up.

i dont get the negative response, all of these things follow the rules aromatically and culinarily.

Honey (real one at least) cannot go bad, so isn't going to waste unless you want. I don't like that mix bcz food that tastes salty and sweet at the same time aren't my thing, I'd rather just use honey for tea.
