Straight 6 is the ideal engine configuration. If you go to
3 litres just make it a 6.
It won't be all that much longer than the 4 of the same capacity. It will be a lot smoother and will sound so much better.

A friend had a small rail with a 4 cylinder Ford marine block with 1 Boss 429 hemi cylinder head on it and 2 webber side draft carbs on it. Weighed 1320lbs and would absolutely Skin it Back.

It's an industrial use engine block used in airport tug trucks.

This engine is still at least a couple years out (if not longer) according to the manufacturer; it’s just a back shop test project….its been pretty well covered in other videos. the block is primarily from an industrial setup (generators, pumps, etc) and usually runs at very low rpm, with a turbo. While it sounds awesome, until they actually put some time and money behind it, I doubt it will make it to market.
