Ingredients:
• 1 litre full-fat milk
• A few saffron strands
• 3–4 tbsp sugar (adjust to taste)
• 2–3 tbsp condensed milk (optional, for extra richness)
• ¼ tsp cardamom powder
• 2 tbsp chopped nuts (almonds, cashews, raisins)
• 1 large ripe mango

Instructions:
1. Boil the Milk:
• Pour 1 litre of full-fat milk into a heavy-bottomed pan.
• Add a few saffron strands.
• Boil on medium heat, stirring often, until the milk reduces to half its original volume.
2. Sweeten the Basundi:
• Add sugar and condensed milk. Stir well to combine.
• Continue boiling for a few more minutes until it thickens slightly.
3. Flavor and Enrich:
• Add cardamom powder and chopped nuts (almonds, cashews, raisins).
• Mix well and simmer for a couple of minutes.
4. Cool and Chill:
• Turn off the heat.
• Allow the basundi to cool, then refrigerate for a few hours until chilled.
5. Prepare Mango Puree:
• Peel and chop the mango.
• Blend into a smooth puree.
6. Combine and Serve:
• Mix the mango puree into the chilled basundi.
• Stir gently to combine and serve cold.
