How do the Chinese preserve tomatoes?
Do you know how sun-dried tomatoes are produced in China? First, the tomatoes are harvested by machine and transported in large trucks. They are then poured into holding tanks to be thoroughly washed of dirt and debris. After washing, the tomatoes are moved onto conveyor belts, where workers carefully remove any unripe or damaged ones. Next, the tomatoes are taken to large drying yards. There, they are cut in half and spread evenly on the ground or placed on elevated racks to catch the sunlight. A thin layer of salt is sprinkled over the cut surfaces to help preserve the color, enhance flavor, and extend shelf life. Under the intense sun, after about 4–6 days, the tomatoes shrink and wrinkle like ripe strawberries, ready for harvesting. The dried tomatoes are then carefully packaged and used as ingredients for a variety of delicious dishes such as salads, pasta, and pizza.
