Chicken, pork, shrimp all work good in a jambalaya. Mix all 3 if you like. In this jambalaya, Hillshire Farm chicken sausage was used.
The Ingredients:
1 tsp cooking oil
1/4 Cup Each of diced bell pepper, onion and celery
6 oz diced Hillshire Farm chicken sausage
1 tsp minced garlic
1/4 Cup Rotel Original
1/4 Cup raw white Basmati rice
1 - 2 Cups water
Brown the sausage in a bit of oil for 5 minutes.
While that is cooking, microwave the bell pepper, onion and celery with a pat of butter for 5 minutes.
Add microwaved veggies to sausage and cook 3 minutes.
Add the minced garlic and cook for 30 seconds.
Add the Rotel and raw rice.
Add 1 1/2 Cups of water.
Cover and cook 15 minutes more or until the rice is cooked.
Ad water as needed but don't add too much as the rice will turn mushy which is no good :)
