Thighs really should be cooked higher and cooking brined chicken usually results in being able to cook the breast meat to higher temps without it drying out and becoming chalk.

185 for thighs or bust. Getting to 185 melts all the connective tissue really nicely. Spatchcock the chicken for even cooking or you won't be able to get the thighs to 185 without the breast overcooking.

Might wanna tell people that it will carryover cook up to the safe temp of 165°f. Personally I wrap it up or keep in the warm oven just to be on the safe side while still having a juicy chicken. There’s also a trick where you can cook the bottom of the chicken on the stove before putting it in the oven and you get fall apart, juicy dark meat with the perfectly cooked breast meat once’s it’s done.

Buttermilk brine is the best chicken preparation there is.
It is cheap, one ingredient, easy to do, and never fails to make the chicken jucier and more tender.
Use it for every single chicken recipe you make.
