This recipe is a good reason to use your slowcooker for batch cooking or meal prep.

Ingredients:
500g pork fillet (cut into strips)
1 onion, diced
Handful of beansprouts
5-6 leaves of Pak Choi
4 garlic cloves, grated
3 tbsp peanut butter
2 tbsp soy sauce
Juice of one lime
2 tbsp honey
2.5cm fresh ginger, grated (I used 1 tsp frozen)
1 tbsp sesame oil
1 red chilli, sliced
300g egg noodles
1 tin 400ml reduced fat coconut milk
Chopped peanuts and spring onions to garnish

Method:
1. Cut your pork into strips and dice your onion, then pop all the ingredients above into the slow cooker apart from your noodles, and garnishes
2. Cook on low for 7-8 hours or high for 3-4 hours (For the last few minutes add in your bean sprouts and pak choi allowing to soften)
3. When ready, cook your noodles in a pan with boiling water for a few minutes and when cooked transfer into the Slowcooker and give it a good stir
4. Garnish with some chopped peanuts and spring onions and serve
