Recipe Description
Sunday Special Mutton masala gravy:
 
Cooking Time: 45 mins
 
For marination:
1.    Mutton - 500 gm
2.    Coriander powder - 1 tbs
3.    Red chilli powder - 1/2 tbs
4.    Green chilli - 1
5.    Salt - 1 tsp
6.    Ginger garlic paste - 1 tbs
7.    Curd - 2 tbs
 
Masala powder:

1.    Cardamom - 7
2.    Cinnamon - 1 inch
3.    Star anise - 1
4.    Pepper - 2 tsp
5.    Red chilli - 6
6.    Nut Meg - a small piece
7.    Cumin seeds - 1tsp
8.    Coriander seeds - 1 tbs
9.    Fennel seeds - 1/2 tsp
10. Stone Flower - a small piece
 
Cashew Tomato paste:
1.    Cashew nuts - 12
2.    Tomatoes chopped - 1/2 cup (50gms)
 
Ingredients Required:
1.    Oil - 3 tbs
2.    Bay leaf - 1
3.    Cumin - 1/2 tsp
4.    Onions - 2 cups (200 gms)
5.    Curry leaves - few
6.    Water - 1/4 cup +2 cups
7.    Salt - 1tsp
8.    Prepared masala - 1 heaped tbs
9.    Coriander leaves - few
 
Time slab/flame:
 
For the special mutton masala:
1.    spices - low 2mins
 
For the gravy:
 
1.    Oil - low heats
2.    Bay leaf - low 30secs
3.    onion - high 10mins
4.    tomato - low 5mins oil separates
5.    mutton - high 5mins
6.    water - high boils
7.    cover - low 20 mins pressure cook
 
Steps for preparation:
 
To prepare the cashew Tomato paste:
1.    First add the cashews to a mixer jar and finely grind without adding water.
2.    Follow by adding the chopped tomato pieces and grinding them to a fine paste.
3.    Keep this aside for use in the gravy later.
 
For the mutton masala:
1.    The first step is to marinate the mutton pieces with all the masala mentioned. Add ginger garlic paste and salt and give a quick stir. Then finally add the remaining ingredients. Refrigerate for a minimum of 30 mins.
2.    To prepare the special masala for the gravy, Take a pan and dry roast all the spices mentioned in the masala powder. Sauté at low flame for about 2 mins until the masala starts turning aromatic. Turn off the flame.
3.    Now let the ingredients cool down and grind to a fine powder.
4.    Heat oil in a Kadai. Now add the Shahi jeera and bay leaf and let it splutter. This takes about 30 sec at low flame.
5.    Now add finely chopped onions and sauté at high flame for about 10 mins until they turn nicely golden.
6.    Now add the tomato - cashew puree and 1 heaped tbsp of the prepared masala. Add some water and cook it until oil starts releasing for about 5 mins at low flame.
7.    Now add the mutton pieces at high flame for about 5 mins and give a good stir with the masala.
8.    Now add 2 cups of water.
9.    After the water comes to a boil, close the lid of the pressure cooker and add the whistle.
10. Pressure cook the mutton for about 20 mins at low flame and open once the pressure is released.
11. Garnish with freshly chopped coriander leaves and the Sunday special mutton masala is ready to be served hot with rice.
