Ingredients:
1 sweet potato, diced into bite size pieces
1 cup Brussels sprouts, cut into half
shredded kale
pomegranate seeds
pecans
pumpkin seeds
goat cheese
salt & pepper
Organic oil spray

Dressing:
1/4 cup olive oil
1 tbsp balsamic vinegar
salt & black pepper
1 tsp dijon mustard

Instructions:
Preheat air fryer to 380 degrees.
Add sweet potato and Brussels sprouts into a bowl, season with salt and pepper.
To air fryer basket add sweet potato and Brussels sprouts and spray with organic oil and cook for 12 minutes.
Add the dressing ingredients to a small bowl and whisk until combined.
Assemble the salad: add kale, sweet potato, Brussels sprouts, pecans, pumpkin seeds, goat cheese, pomegranate seeds and add the dressing.
