ese caldo se prepara haciendo hervir el mote hasta que reviente de ahí se hecha la menudencias de vaca que es el mondongo y carne de carnero se sigue haciendo hervir hasta que la carne y menudencias estén cocinadas se sirve picando cebolla china y rodajas de rocoto si prefieres le hechas unas gotas de limón y rocoto molido al gusto
