This is a compilation of New Year's dishes that my grandma made for 2022.
Herring roe
After preparing the herring roe by removing salt and removing the skin, season with marten soup, mirin, sugar, and bonito flakes. It has a stronger flavor than commercially available seasoned herring roe, and I love pickled in hot water with strong seasoning, which is something I look forward to during the New Year.
Vinegar turnip
They made vinegar turnips using extra large turnips. Cut the turnips, pickle them in salt, and let them sit overnight. Heat Mizkan rice vinegar, sugar, and ajinomoto, then turn off the heat just before it boils. Add drained turnips, kelp, chili pepper, boiled vinegar, and yuzu vinegar to the container and season.
Black bean
Bring black beans to a boil with sugar, salt, and baking soda, then add black beans and leave until morning. After that, put it on the fire and slowly simmer it for a while while adding water. It seems that by adding water while doing this, it won't wrinkle.
Konbu roll
Wrap the tuna in bite-sized pieces of washed and moistened kelp, then wrap the tuna in rinsed kanpyo and cut the musubi into musubi. Add an appropriate amount of water, season with dashi stock, sugar, mirin, cooking sake, and soup stock, and simmer.
Yokan
Add water to the adzuki beans and cook, adding water from time to time to simmer. Cook until soft, then strain through a sieve. Put red kanten and water in a hand pot and bring to a boil. Adjust the taste with sugar and salt, then add the strained red bean paste and bring to a boil. After that, check the moisture with a spatula, pull out the thread, put it in a container, and let it harden and you're done.
Yokan
Add water to the adzuki beans and cook, adding water from time to time to simmer. Cook until soft, then strain through a sieve. Put red kanten and water in a hand pot and bring to a boil. Adjust the taste with sugar and salt, then add the strained red bean paste and bring to a boil. Chikuzenni
Cut the konjac, carrot, burdock, and lotus root, and soak the lotus root in vinegar water. Stir-fry the chicken in sesame oil, then add the vegetables and chicken to a hand pot, season with water, dashi stock, sugar, mirin, sake, and dashi soup, and simmer.
New Year dish
Grill the mochi, season with dried sardines, mirin, and usukuchi soy sauce, then add chikuwa, mizuna, and mochi to complete the dish.
Zenzai
Cook the red beans and add sugar and salt to taste.
