Alright i'm going to divide this explanation into 4 parts :

1st part : The made up/fake Shinobu statement.

2nd part : The Akaza VS Kokushibo Fight.

3rd part : Gyomei's feats

4th part : How Akaza loses to Gyomei

Part one : The Shinobu Statement
"No hashira can defeat UMS 1-3" is actually a fake statement or made up by fans and the only thing Shinobu really said in the flashback of ch.162 is "The power of an uppermoon is equal to 3 hashira" and she said this after they knew about the marks,but this statement was debunked by marked Muichiro when he one shotted Gyokko in his final form.
It simply goes like this :
-Shinobu says that : 1 UM=3 hashira.
-Muichiro one shots Gyokko.
-Statement debunked.

Part two : Akaza VS Kokushibo
Many people use Koku to upscale and overrate Akaza by saying "Akaza's life was spared by Koku cause he gave a good fight" and these people have no solid proof to back up this argument (no statement,no feats,no panel literally nothing) the only thing that we know is that Akaza lost and that was it,Kokushibo didn't mention anything about Akaza giving a good fight.

Part three : Gyomei's feats
Since feats are more reliable than statement and made up stories i'm going to use them to illustrate the gap between the strongest hashira and uppermoon 3.

Let's start :
At the start of the fight (CH.169) Base Gyomei went toe-to-toe with Base Kokushibo for a little while,and as we clearly saw what Base Gyomei was able to do he was more offensive almost through-out the whole encounter he even prevented Base Kokushibo from using his breathing techniques twice,and when Base Kokushibo tried to slash Base Gyomei's neck Gyomei simply and calmly dodged the attack but later on got his face slashed by a moon breathing attack.

Moving onto CH.170 :
An angry Kokushibo tried to speed-blitze Pre-STW Marked Gyomei but he blocked it only received a tiny scratch on his neck.

Marked Gyomei reacted to LS Kokushibo's first attack by saving Sanemi from losing both of his arms as he said in CH.172 "If Himejima hadn't changed the attack's trajectory with his chain i would've not only lost my fingers but both of my arms as well"

Later on as the fight continues LS Kokushibo spamed his moon breathing attacks non-stop but not even one of them manged to touch Pre-STW Marked Gyomei but he also couldn't launch his attacks at Kokushibo.

After Gyomei got the STW he managed to throw something at Kokushibo's hand something called "JUZU BEAD" to stop him from attacking and he throwed it so fast that not even Kokushibo with his STW could react to it even he was suprised it slipped through his sight and after this he also couldn't react to STW Marked Gyomei's iron ball attack that removed a part of Kokushibo's upper right side of his body.

What feats does Akaza that match Gyomei's feats ? Akaza got speed-blitzed by Marked Giyu and almost got beheaded.

Part four : How Akaza loses to Gyomei
After Akaza got beheaded by selfless state Tanjiro he said this "Within the span of this short fight,this guy managed to surpass my speed after understanding something" (CH.153)
"Managed to surpass my speed" obviously referring to his reaction speed because that's what you need to block or avoid an incoming attack,and Gyomei was shown to be far above Akaza's speed by dodging LS Kokushibo's attacks without STW and hitting Kokushibo and Muzan many times After he got the STW,and red blades already prevent regen which means Akaza won't be able to regenerate his head.
