To be fair to the medieval era, ginger has some pretty broad uses from eliviating the negative effects of chemotherapy, reducing your suceptability to cell death from low energy radiation, and it probably (no conclusive studies yet) reduces inflamation and assists the respiratory system.
Excessive consumption of ginger can reduce blood sugar levels so it was undoubtedly used by the rich to counter honeyed urine, or diabities.
The combination of "it helps the rich", its actual effects, and the placebo effect probably served to provide enough anecdotal evidence that ginger would be effective against a plague.
