Here’s a simple recipe to prepare Surmai Fry (Kingfish Fry):

Ingredients:
Surmai (Kingfish): 6-8 slices
Turmeric powder: 1/2 tsp
Red chili powder: 1 tsp (adjust to taste)
Ginger-garlic paste: 1 tsp
Lemon juice: 1 tbsp
Salt: to taste
Rice flour or semolina (rava): 2-3 tbsp (for coating)
Oil: for shallow fryingOptional

Spices:Coriander powder: 1 tspGaram masala: 1/2 tsp

Instructions:Clean the Fish:
Wash the fish slices thoroughly and pat them dry with a paper towel.Marinate the Fish:
In a bowl, mix turmeric, red chili powder, ginger-garlic paste, lemon juice, and salt.
Add optional spices if using. Coat the fish slices well with the marinade. Let it rest for at least 30 minutes (or up to 2 hours in the refrigerator for better flavor).
Coat the Fish:
Just before frying, coat the marinated fish slices lightly with rice flour or semolina. This gives a crispy texture.Heat Oil:
Heat a pan with 2-3 tbsp of oil on medium flame.Shallow Fry:
Place the fish slices in the hot oil and fry on medium heat for about 3-4 minutes per side, or until golden brown and cooked through. Avoid overcrowding the pan.Drain Excess Oil:
Remove the fried fish slices and place them on a paper towel to absorb any excess oil.
Serve:
Garnish with fresh coriander leaves and serve hot with lemon wedges and onion rings. Pair it with steamed rice or enjoy as a starter.
