Great Idea but you are only utilizing 1/3 of the potential speed when running max speed. Fastest USB can't go over 1-1.5 GB/s but an NVMe can go up to 5 GB/s so maybe it would be best using a normal M.2 SSD to save some money as well ! The idea is great tho, you can have all your games and applications there and literally take them with you
