Recipe for zarda pulao/rice:
Serving size : 3 people
Take a wok/kadai, add 3 glass water. Add tez patta, 3-4 green cardamom, 2-3 cloves and cinnamon stick. Let it cook for 2 min for adding fragrance to water. Add few drops of orange food colour. Add 1 cup sugar and add 1 cup soaked rice. Cover and cook for 7 minutes.

Meanwhile in another wok fry dry fruits in ghee (cashew, almonds, walnuts and dry coconut used here).

Now the final process. In wok add 2 tablespoons of ghee. Add cardamom (green and black), cloves, tez patta, cinnamon stick and cook for 1 min. Now add cooked rice and give it a stir. Sprinkle fried nuts on top of it and add desicated coconut and cover with foil to steam cook on low heat. Do not mix them.
After 10 min mix the rice and serve hot.
