Powdered fruit on top worked well, I reckon raspberry powder would be fantastic too.
For the sparkling wine Id recommend traditional method ones for the biscuity notes (eg. Champagne, Cava, Crèmant)
Remember to shake for slightly longer than you think you should for this one

If you want lots of foam out the top of the glass I’d recommend leaving in the freezer for 5 mins before pouring the fizz on-top. You should also probably add a splash of fizz to the bottom of the glass before pouring the mixture on top, but I was too excited to drink this and therefore forgot.
