Is Larch wood a suitable species for cutting boards? On paper, I can see only one true benefit, and that is its hardness, or better lack thereof. It is almost two times softer than walnut and three times softer than oak, making it very "knife-friendly." However, it is ultimately a softwood, which is only moderately durable, or at least that is what I have been taught.

Initially, I thought resin pockets might be an issue, but there were only a few very small dried-up ones, which are easily trimmed off. Also, it's very different to work with due to its lightness and susceptibility to dents.

The core wasn't running straight through this board. Since it would mess up the pattern I am trying to achieve, I decided to connect the centers on each board and rip it in half across that line with the track saw. Afterwards, I made it parallel on the table saw and squared off the edges before the first edge-grain glue-up, creating two boards to combine in the next step into one end-grain cutting board.

I'm still not sure how I will treat this board in the end. A standard mineral oil bath and wood wax, or perhaps some food-safe hard wax oil?
