I grew up eating lotus in China. Their seeds can be eaten raw or ripe. When they are very ripe we call them iron lotus seeds. Some people like how hard and chewy they are. The heart of lotus seeds r bitter and can be used for inflammation. Lotus leaves can be dried and made into medicinal tea for summer time for internal cooling and water circulation. Lotus roots can be stewed with meat or stir fried. U can make hot pot with them too. Very young lotus roots can be marinated and stir fried. They are very crispy and yummy.

Native Chinese here, we eat almost every part of this plant. The roots can be stir-fried with vinegar, soy sauce and pork to make a crispy dish. The sprouts (the ones that are white and found under water,not the green ones that have grown out of water) can be cooked just like the roots, or boiled and marinated with vinegar, hot peppers and soy sauce, and eaten as a snack. All parts of lotus are useful including leaves ,stem etc we used to eat raw young lotus leaf with chutney ,can used the big leaves as plate and petals are used to drink tea ☕ its very beneficial for health also the seeds and roots are very beneficial you can eat raw we eat the roots for salad with mixed vegetables seasonings with salt, chillies,roasted perilla seeds, besan and fermented fish.Love from northeast India (Manipur)❤️

There is going to be a LOT more American Lotus content coming up on this channel. This is perhaps one of the most significant wild food species in all of North America, and if you add in its cousin, White Lotus (Nelumbo nucifera) across the entire globe!
