DAY 2/20 of my go-to recipes as a college student!

Sweet Potato Fries
INGREDIENTS:

-4-5 large sweet potatoes
-1/4 cup avocado oil (drizzle more if needed)
-salt & pepper to taste
-1 tsp smoked paprika
-(optional) chopped parsley for garnish

DIRECTIONS:
Preheat oven to 400°F.
Chop the sweet potatoes into wedges. Larger wedges will need more cooking time so if you need them done faster, slice them a bit thinner. Drizzle avocado oil. Each piece should be thoroughly coated. Next season with salt, pepper, & paprika. (You could even add garlic powder here)! Mix to combine.

Place wedges on a parchment-lined baking sheet. Make sure to evenly space the fries so that each one can get extra crispy! If you pile them on top of each other, they will steam and get soft instead…

Bake for 45-55 minutes or until the edges start looking caramelized. Serve with your condiment of choice. Pair this with a veggie and meat and you have a super easy meal!
