I was daydreaming about food and had a sudden craving for Gỏi Cuốn, Vietnamese spring rolls. With little time, I rushed over to Trader Joes and picked up pre-cooked pork belly and pre-washed veggies, prepared shrimp and some ingredients I already had at home, and we were rollin’ in no time!
Vietnamese spring rolls are so fresh, versatile and customizable! As long as you have rice paper, you can prepare whatever ingredients you have available or like and make spring rolls. I used precooked pork belly, but I’ve also seen people use prepared cocktail shrimp or rotisserie chicken as a quick protein for the rolls as well. NO LIMIT OPTIONS!
Buying pre washed veggies is a super time saver and its super delicious and colorful!
Gỏi Cuốn Ingredients:
1 pound shrimp, peeled and deveined
1 teaspoon salt
2 12-ounce packages of Trader Joe’s cooked pork belly, thinly sliced
5 ounces thin vermicelli noodles
10-15 rice paper
½ package shredded lettuce
½ package coleslaw mix
1 package mint
1 cucumber, seeded and sliced
Hoisin Peanut Sauce Ingredients:
1/2 cup Hoisin sauce
1/4 cup creamy peanut butter
3/4 cup water, more to smooth out sauce
1 tablespoon rice vinegar
2 teaspoons Sriracha sauce, more or less to taste
Salt to taste
