It depends. Lightsabers are designed and created in power meditation process and user deside how is will function. Some have on/off switch, some jave button that you need to constantly push, some doesn't have any buttons and activated by using force to twist the mechanism inside like mase windu did.

Actually inside of most lightsabers there is a button. Which makes only force users to use these weapons, and also making them able to throw. And another thing is sense General Grievous didn’t use the force because he couldn’t then he couldn’t throw his sabers.

I do believe ina YouTube video someone explained reading the books it stated some have pressure sensors some have switches or even both for light saber throws and what not...

In no way is this true.
Everyone's talking about lightsaber throws, but literally just a saber spin would release the pressure. Like that whole scene on Mustafar with Anakin and Obi-wan, they'd have gone to spin their lightsabers and they'd just turn off.
I think the real reason is that it seems like a lot of work to figure out how dropped lightsabers would function 😂
