Recipe: Classic Bruschetta

INGREDIENTS:
• Baby Plum Tomatoes - 8 to 10
• Olive oil - 3 tbsp + extra for drizzling
• Basil leaves- Handful of fresh chopped basil leaves.
•1/2 tsp flakey salt
•2 garlic bulbs
•1/2 loaf white sourdough

INSTRUCTIONS:
•Drizzle each side of the sourdough slices with olive oil and place into a baking tray. Put it in the oven with temperature at 200° C and cook for roughly 8-10 minutes each side.

•Garlic confit: Place the peeled garlic cloves (2 bulb) and oil in a ramekin or a small oven-safe bowl. Cover and bake until cloves are golden and tender, about 15-20mins at 200°C. Let it cool.
•In a large bowl, toss together the tomatoes, chopped red onions, chopped basil leaves, olive oil and salt. Leave to marinate for several minutes. 
•Rub the garlic onto each slice of toasted bread , place mozzarella cheese and spoon the bruschetta mixture on top.
•Drizzle some balsamic vinegar.
Bruschetta is ready 😋
