Ingredients:
Jerked spiced potatoes:
1.5 lbs potatoes
1 tsp salt
1 tbsp cornstarch
2 tbsp jerk paste
Walnut mince:
2 cups walnuts, soaked
250g mushrooms (oyster, button or cremini)
2 onions, sliced
1 tsp salt
1 bell pepper, chopped
1/2 - 1 cup bbq sauce
pico de gallo:
1 cup fresh diced tomatoes
1/2 cup diced red onion
1 small jalapeño diced
1/2 cup chopped cilantro
Juice of 1/2 a lime
Salt to taste
guacamole:
2 medium-sized avocados
1/2 cup diced red onion
juice of a lime
1/2 cup cilantro chopped
garlic powder to taste
salt to taste
