That portion is actually what holds the kelp up - its hollow, filled with air, allowing it to float so the rest of it can photosynthesize :)

Iv cooked fish in kelp leaves it’s how our native people of New Zealand used to cook fresh fish, never thought about eating it tho

whenever we go fishing, we bring kelp back with us. you just soak em for a while and clean them thoroughly before sun drying them or air drying them and you can store them or just skip the drying part and make soup from the blades.

im in england in devon and we have something called a pickled oyster, its an oyster with chilli vinegar and pickled onions. please try it absoutely amazing
