Ingredients
•Two large chicken breasts, seasoned with salt, pepper, garlic powder, and paprika
•1 tbsp each butter and oil
•1 1/2 cup chicken broth
•2 cups instant rice
•1 10.5 ounce can cream of chicken soup
•1 cup sour cream
•1 cup frozen diced onion and bell pepper blend
•1 4 oz can diced green Chiles OR one 10 ounce can Rotel
•1 packet fajita seasoning
•2 cups shredded fiesta cheese
Instructions
1) Preheat oven to 350
2) Season your chicken with the seasonings above. Get out a skillet and heat your butter and oil. Add your chicken and cook both sides until 165 internally.
3) Place your chicken in a large bowl and shred. Add your chicken broth, instant rice, cream of chicken soup, sour cream, frozen onions and peppers, diced green Chiles (or Rotel), fajita seasoning, and one cup of shredded cheese. Mix well. TIP: I have tried this recipe with normal rice AND instant rice (I actually used normal rice in the video). The instant rice is much better, much easier. The normal rice takes longer to cook. Definitely use instant rice, if you can.
4) Pour the mixture into either a large oven safe skillet or a 9x13 baking dish (either one should be greased). Spread evenly and cover with foil.
5) Bake for 40 minutes, then uncover, add your remaining cheese on top, and put back in the oven until your cheese melts.
6) Garnish with chopped cilantro. Enjoy!
