Roasted vegetables are simple and delicious to make and enjoy ! These are a perfect addition to add to your meal when youâre looking to add in some additional nutrition. Best part is it doesnât require a lot of time or prep simply start by cleaning your veggies and chopping them into thick pieces.
I recommend if doing sweet potatoes having them in medium chunks so they donât take forever to cook in the oven and also they donât shrink up on you . The best part is the sauce comes together with 2 tbsp soy sauce and 2 tbsp maple syrup. Hereâs what else youâll need to make these which more than likely you have on hand in your pantry .
1 bunch asparagus
1 parade purple onion
4 medium sweet potatoes
2 tbsp soy sauce
2 tbsp maple syrup
1 tsp sea salt
1 tsp black pepper
1. Start by cleaning your asparagus, sweet potatoes and peeling them or leaving the skin on itâs a personal choice .
2 . Cut the asparagus root ends off , cut the sweet potatoes, and cut the purple onions .
3 . Spray your baking sheet and use a silicon cover so that the baking sheet doesnât become sticky once you add the sauce and cook the veggies .
4 . Place veggies on the baking sheet then coat them in 1 tsp sea salt , 1 tsp black pepper
5 . Place in oven at 400F for 20-25 minutes until medium softness and almost fork tender . After this time frame mix together the 2tbsp soy sauce and the 2 tbsp maple syrup and cook for an additional 10-15 minutes and toss to evenly coat the veggies .
6 . Serve and enjoy with your meal
