Ingredients
•1/2 cup Parmesan cheese (grated)
•1 cup mozzarella cheese (shredded)
•1 1/2 cup ricotta cheese
•1 lb ground beef (or ground sausage) (seasoned with salt, pepper, and garlic powder)
•1 tbsp olive oil
•1/2 yellow onion, chopped
•1 tbsp garlic
•7 cups chicken broth
•2 tbsp tomato paste
•1 jar marinara sauce
•1/2 tsp crushed red pepper flakes
•2 tbsp fresh parsley, chopped (or 2 tsp dried parsley)
•1/2 tsp oregano
•1 tsp dried basil
•9 lasagna noodles
•fresh basil for garnish
Instructions
1) In a small mixing bowl, combine your Parmesan, mozzarella, and ricotta cheeses and mix well. Cover and set aside in the fridge.
2) Get a soup pot going over medium heat. Add your ground beef. Season with salt, pepper, and garlic powder. Cook until browned, then drain the grease and set the ground beef aside.
3) In the same soup pot, add 1 tbsp olive oil and cook your chopped onions until they soften. Add your garlic and cook for another minute.
4) Add your chicken broth, tomato paste, marinara sauce, and the seasonings above (crushed red pepper, parsley, oregano, basil) and mix well.
5) Add your ground beef and stir occasionally until your soup comes to a boil.
6) Reduce the heat to medium-low. Break your lasagna noodles into fourths and add them to your soup. Cook until noodles are tender (12-15 minutes).
7) Serve with a hefty dollop of your cheese mixture and garnish with fresh basil. Enjoy!
