I think one of the reason for the difference is that in the books they had a dragon to train and one to ride but in the movie it is just one dragon for both

Also, in the books, Toothless is the most disobedient, annoying and selfish creature on the planet. And because Hiccup actually speaks Dragonese, half the books have him begging toothless not to screw him over out of petty spite. It's hilarious
