Luv and value your videos, books, and podcasts. I have learned the hard way that I must avoid the lectin foods u recommend to be avoided. I so wish you would provide info on how your recommended food listing be adjusted for sibo patients. I find I need to use Seibeckerā€™s Sibo diet as a filter with your recommended acceptable food listing. This leaves a very limited array of foods to choose from and is troublesome for ensuring sufficient nutrition. I have POTs too so I need to be very careful as gut dysfunction or too little potassium and sodium aggravate a POTS flare. Also challenging when you have osteo and ensuring you get sufficient calcium intake. Canā€™t thank you enough for what I have learned from you! God bless you.

I pressure-cook these in Instant Pot. My favorites are Murasaki and Okinawa sweet potatoes. Stokes are good too.

You can also boil the sweet potatoes and chill them before you eat them and you can still heat them back up . The cooling helps turn more of the starch to resistant starch

Boiling is a bit of a double edged sword though, as you might get more resistant starch but you will lose significant more water-soluble vitamins like the B6 and Vitamin C compared to baking
