Makhana and Nuts kheer. No refined sugar kheer.

1+1/4 cup Makhana or foxnuts
500 ml full fat milk
1/4 cup coconut sugar or white sugar
1.5 -2 tspn clarified butter or ghee
5 cashews whole roasted
5 Almonds whole roasted
1/4 Tspn Saffron
6-7 cashes crushed
6-7 Almonds crushed
7-8 Pistachio crushed

take ghee once it melts add Makhana roast for 5-7 minutes on medium flame.e till crispy and golden brown.
now add 500 ml full fat milk to a pan . bring it boil and cook for 5 minutes
In the meantime take 5-6 Roasted Makhana and whole nuts grind to a powder.
add above mixture to above milk. stir continuously. scrape the sides.
Cook for 5-7 minutes
now add Sugar and Saffron soaked in 1 tbson warm milk for 10 minutes to the milk.
Coo for 5-7 minutes stir continuously. scrape the sides.
Now add crushed almonds cashews and Pistachio and roasted Makhana and cook for 20-22 minutes.
Continuously stir the milk while it is being cooked. Do not forget to scape the sides.

Once the milk is reduced the texture is creamy switch off t/to bowl.
do not make it very thick as it thickens once cooled down.
refrigerate 4-5 hours .serve chilled or warm.
