If you’d rather not make a whole batch of canned pickles but still want amazing pickles, this refrigerator sweet pickle version is for you! They’re super easy to make!

1 cup white distilled vinegar
1/4 cup water
3/4 cup granulated sugar
1 tbsp kosher salt
4 cups sliced cucumbers
1 tsp pickling spice, separated

In a saucepan, combine the vinegar, water, sugar, and salt. Place the brine over medium heat and let it come to a boil. Prepare the cucumbers in chips or spears. Pack the cucumbers into jars, sprinkle on the pickling spice, then pour the hot brine over the top. Place a lid on each jar and place it in the refrigerator. Allow the pickles to sit in the brine for two days before enjoying.

My 86 year old mother found her mother’s pickle recipe. It wasn’t a quick pickle but OMG they weee THE best! They took 5 days! I’ll have to try these, if I can find pickling spice in France!
