      RECIPE
      Ingredients:
      For the sauce:
      •⁠ ⁠2 tbsp ginger, grated
      •⁠ ⁠1 tbsp sesame oil
      •⁠ ⁠1 tbsp soy sauce
      •⁠ ⁠1 tbsp agave or maple syrup
      •⁠ ⁠1/2 tbsp rice vinegar
      For the tofu:
      •⁠ ⁠1 pack of firm tofu, cubed
      •⁠ ⁠30 g cornflour
      •⁠ ⁠1 tsp garlic powder or granules
      •⁠ ⁠1/2 tsp black pepper
      For the rest of the dish:
      •⁠ ⁠Sticky white rice for 2
      •⁠ ⁠Spring onion, sliced
      •⁠ ⁠Sesame seeds

      Method:
      1.⁠ ⁠In a small bowl, mix the ginger, sesame oil, soy sauce, agave, and rice vinegar to make the sauce. Set aside.
      2.⁠ ⁠If serving with rice, get it cooking now.
      3.⁠ ⁠Combine the cornflour, garlic powder, and black pepper in a container. Add the tofu cubes, cover, and shake until evenly coated.
      4.⁠ ⁠Heat oil in a large non-stick pan. Add the tofu and cook until golden and crispy on all sides.
      5.⁠ ⁠Pour the sauce over the tofu, stirring quickly so it coats and caramelises.
      6.⁠ ⁠Serve with rice, spring onion, and sesame seeds.
