So here you go, Roshen Maasi’s sojee from @fehmz
500g butter
2 & half cup semolina/taystee wheat
2 pieces of taj (cinnamon stick) and a healthy pinch of elachi powder or two whole elachi (cardamom)
Melt butter, add spices and semolina and braise well.
In the meantime in a bowl combine the following:
6 eggs (sub 300ml milk for egg-free version)
1 litre milk
2 & half cups of sugar
Half tsp egg yellow colouring
Pinch of saffron
Pinch of elachi powder
Beat well and pour into the braised semolina whisking to ensure no lumps.
Cook on slow until done, stirring often in between.
The liquid will be absorbed and you’ll just know when it’s done.
Serve with sliced almonds, nestle cream, pistachios, whatever your heart desires.
You are welcome to add sultanas or any other additions while you are cooking it but we love it as is.
