Ingredients:

Bhindi (Okra/Ladyfinger): 250 grams (washed, dried, and slit lengthwise)

Oil: 3-4 tablespoons

Mustard seeds: 1/2 teaspoon

Curry leaves: 6-8 (optional)


For the stuffing:

Besan (Gram flour): 2 tablespoons
Coriander powder: 1 teaspoon
Cumin powder: 1 teaspoon
Turmeric powder: 1/4 teaspoon
Red chili powder: 1 teaspoon (adjust to taste)
Garam masala: 1/2 teaspoon
Amchur (Dry mango powder): 1/2 teaspoon
Salt: To taste

Instructions:
1. Prepare Bhindi:
Wash and pat dry the okra completely.
Trim both ends and slit each bhindi lengthwise without cutting them in half.
2. Prepare Stuffing:
In a bowl, mix all the stuffing ingredients (besan, coriander powder, cumin powder, turmeric, red chili powder, garam masala, amchur, fennel powder, and salt).
Add 1 tablespoon of oil and mix until it forms a crumbly, spiced paste.
3. Stuff the Bhindi:
Carefully fill each slit okra with the prepared stuffing. Press gently to ensure the masala stays inside.
4. Cook the Bhindi:
Heat oil in a wide pan. Add mustard seeds and curry leaves, letting them splutter.
Arrange the stuffed bhindi in the pan in a single layer. Cover and cook on low heat for 10-12 minutes, flipping gently at intervals.
5. Finish:
Cook uncovered for another 5 minutes to ensure the bhindi turns crispy and the masala is well-roasted.

6. Serve:

Garnish with chopped coriander (optional) and serve hot with roti, paratha, or steamed rice.
