Recipe: Fresh Tomato Basil Soup w/ Grilled Cheese sandwich
Ingredients:
- Onions
- Carrots
- Big Tomatoes (2) or Roma Tomatoes (4)
- Canned Tomatoes (2 - 28 oz)
- Tomato Paste
- Sun-dried Tomatoes
- Butter
- Garlic
- Cheese slices (Colby Jack, Pepper Jack, Cheddar, Monterey Jack, White Cheddar, Swiss, Mozzarella, Havarti)
- Shredded Cheese
- Parmesan Cheese
- Chicken Broth/stock
- Heavy Cream
- Thyme
- Basil
- Onion/Garlic powder
- Dried Oregano
- Cayenne powder
- Salt/Pepper
- Bread (Baguette, Asiago, Sourdough, Rye)
- Parsley
Cooking Instructions:
Step 1: Tomato Basil Soup
Use about 2/3 to 3/4 of stick of butter and add your diced onion/carrots into a pot. Add some minced garlic and mix around on medium heat. Add a few sprigs of thyme.
Boil your big tomatoes in a separate pot for 5 minutes and add into veggie/soup blend. Add 2 canned tomatoes (brand of your choice, 28 oz each), 4-6 TBS of Tomato paste, and 4-8 oz of Sun-dried tomatoes.
Add about half to 1 teaspoon (or as much as you desire) of onion/garlic/cayenne powder, salt/pepper, and dried oregano. Add about 1¾ - 2½ cups (14-20 oz) of Chicken Broth/Stock (home-made preferred, store-bought OK. Use veggie stock for non-meat option). Then blend/whisk everything together until smooth, let simmer on high heat for 8-12 minutes. Add 4-6 leaves of basil, some grated Parmesan cheese, about 1¼-1½ cups (10-12 oz) of heavy cream and blend it all together.
Pro Tip: Add about 1 teaspoon of chicken or mushroom bullion to enhance the flavor and add depth to your soup. (Optional)
If you don't have a hand-held blender, transfer to a regular blender. Whisk and blend together and finish cooking for 2-4 minutes. Set in a bowl when finished, garnish with parsley.
Step 2: Grilled Cheese:
With the last 1/4 stick of butter, add to a mixing bowl. Add your shredded cheese, and optionally, you can mince up some garlic and herbs of your choice. Mix it all together until smooth.
Slice your bread of choice and on both sides, add the buttered cheese. On the other side, add your cheese slices of choice and cook both sides of the bread on medium high heat for 5-8 minutes.
