Amla Launji
* 250 gms Amla/Gooseberry about 7 big ones
* 2 tbsp Mustard Oil
* 1/2 tsp cumin seeds
* 1/4 tsp Asafoetida
* 1 tsp Kalonji seeds
* 1 tbsp grated Ginger
* 3 green chillies chopped
* 1/2 tsp Turmeric Powder
* 1 tsp Coriander Powder
* 3 tsp Fennel Powder
* 1 tsp Red Chilli Powder
* 3/4 tsp Black Salt
* 30 gms Jaggery
* 80 gms dates 5-6 dates chopped
* 1/2 cup water
1. Steam the amla for 10 mins until it if soft.
2. Once the alma is cooked break it into pieces.
3. In a heavy bottomed pan, heat some mustard oil. Then add the cumin seeds, kalonji seeds and hing. Roast it for a few mins until the spices smell fragrant.
4. Now add the grated ginger, chopped green chillies, turmeric powder, fennel powder, red chilli powder and coriander powder. Mix well.
5. Then add black salt, jaggery and chopped dates. Mix everything well.
6. Add in water and mix everything really cook. Cook on low heat and continue stirring.
7. The jaggery will start the melt and the amla will start to soften up. Cook until most of the water is evaporated and the pickle looks like a thick jam.
8. Let it cool and bottle it in an airtight container. Store it in the refrigerator.
9. You can enjoy this immediately or let it marinate for a few days until the amla absorbs all the flavours.
10. It should be perfect on day 2. Enjoy it with some rice, roti, papad or anything you like.
