He's not only attacking and defending but also forced Anakin to be in the defence and Obi Wan to be in the offence. If you know how both of them normally fight with Obi Wan in the defence and Anakin in the offence, you know how skilled Dooku is.

To be fair, he is fighting in a way that gives him the advantage. He judo throws kenobi which stuns him briefly allowing him to push anakin. As he pushes anakin aggressively, he’s creating distance from obi and in turn he dictates the position of the fight. idealistic circumstances would be that all your opponents are in front of you, towards the end, dooku gets behind anakin and so dookus targets are in front. Not to mention he specializes in a lightsaber form tailored for controlling a fight through finesse and efficiency. Both of which anakin and obiwan lacked at least on offense.

The thing is, this duel was NEVER supposed to take place. Canon was broke here. In the Revenge of the Sith NOVEL, Dooku meets and duels Anakin and Obi-Wan in front of Palpatine for the first time since on Geonosis (Attack of the Clones).
